First Season Questions

Now that I've finished watching first season Angel and I'm well on my way through second season, I have a handful of nagging questions from first season. I actually expected these to be answered on the various commentaries, featurettes, and other stuff on the DVDs, but nothing presented itself.
- What is the name Wolfram and Hart a reference to?
- Why did Doyle leave at the end of episode nine?
